I was going to say - yes it does! I used Thunderbird up until about 2004-2005, when I disliked the new v3.x so much that I moved to Gmail. However, as a follow-on poster has indicated, you certainly can do quote-collapsing in T'bird. It will also do quote-level colouring, which you might find helpful.
