OK - so I feel stupid now - sorry for all the repeated comments. I apparently needed a new kernel to get this to work, not the blacklist I mentioned above. Bug #518387 talks about a new kernel being worked on that clears up some KMS issues (I think). I added the kernel from the PPA mentioned at https://bugs.launchpad.net/ubuntu/+source/linux/+bug/518387/comments/2 and now I have working Nouveau on all the different bootable drives I have running Ubuntu 10.04.
