Update: I manually downloaded the previous version of gnome-settings-daemon .deb file (3.0.1-0ubuntu1~build2) from...
https://launchpad.net/~gnome3-team/+archive/gnome3/+build/2488235 ...and installed it via the terminal while still logged in. I logged back out and back in and everything is back to normal, 'gnome-settings- daemon' is now starting and running without a problem at login, there are no crashes and themes work correctly. Something obviously changed in "3.0.1-0ubuntu1~build3" that causes the daemon to crash upon login. Unfortunately, I'm not coder enough to troubleshoot further.
