You can stick with the LTS release if you like to upgrade things yourself all the way. ( like getting the new Gnome, etc ) if you don't want to get into all the hassle, then you can upgrade to 8.10 :)
As for the applications, if you installed the latest versions from DEB packages they may get removed ( or replaced with the 'latest from the 8.10 repo' ), otherwise they should just work fine ever after. If you have your /home on a separate partition you shouldn't worry about most of your data and configurations, only the system wide ones like xorg.conf, etc. if you decide to go with an clean install instead of an upgrade.
