I don't see this as a bug at all. The default sbuild profile (which one
might rightly expect a script called "mk-sbuild" to use) should not be
mounting anything unnecessary for clean package builds, which certainly
includes /home.
For people who like to double-down and use the same chroots for schroot
logins and sbuild builds (as I do), I recommend making a "custom"
profile, merging the bits of the sbuild and default profiles that match
your use-case, and setting that profile in all your chroot configs.
