The default transcoding settings are in the convert.conf, and then you can keep your custom ones in slimserver-convert.conf. I would suggest copying back a convert.conf and then edit your slimserver-convert.conf so only the new custom line is in there.

LAME is actually sending it over at whatever $BITRATE$ is set to in your player settings. This can be set through the web interface under "Player Settings" then "Audio". This is also were you can set the $QUALITY$ varible. This tells LAME how aggressive to be in compressing the audio. I find a setting of 2 give good quality and doesn't hammer my server like setting it to 1 does. I'm glad it is working for you, and I got to learn some new things about mplayer and redirecting I/O.
