Newbie Linux user question ;)

I'm looking at migrating my Slimserver setup from the cosy, familiar
world of Windows, to the new and uncharted (for me) territory of Linux,
having been very impressed by both Mandriva Linux for desktop use and
ClarkConnect for a dedicated server.

There's a steep learning curve here, but a basic question I have is
I've a few PC's I've gained from some work disposals, and am trying to
select the best machine to use.

I have a P2 (might be P3, can't remember) 400MHz candidate (Dell
Optiplex) and some Workstation 400's that I can steal bits from to make
a dual-CPU machine (2x300MHz P2's).

Is there any advantage to using a Dual CPU machine in terms of
performance, I know SS is single threaded, but would the Kernel use one
CPU whilst SS uses another? What about the ancillary programs (mplayer
and other transcoding functions) would that benefit.

Does Linux support dual CPU 'out of the box'.
