I'm not going to claim to be an expert, but do you have either of the
"forks" enabled under Server Settings -> Performance?  If you do, you
should see a new instance of slimserver when one of those two processes
start.  Just a thought.  Otherwise I haven't noticed two instances
running when the "forks" are not enabled.  I'm also running ubuntu with
fairly recent 6.5b1.
