How do I stop SlimServer from automatically starting? As with
everything in Ubuntu, there's a GUI tool for this but SlimServer isn't
listed.

Not knowing how to even spell Ubuntu, I am still willing to bet that there is a GUI control for it. Look at whatever the user friendly GUI tool for administration is. Somewhere in there, there will be something to control "services". On Mandriva, they even use an icon that looks a lot like the gear that NT/2K/XP use in control panel to do the exact same thing.

And somewhere on the list, will be slimserver with a "start on reboot" or "start automatically" option. Set it to "manual start"
(which is exactly what you do on Windows).
