I'm a little late in this thread, but I'll throw a plug in for Arch Linux. It's a nice snappy lightweight distro that uses a more bsd-ish init. Arch subscribes to the "keep it simple" philosophy, and has made a rock solid fileserver/slimserver for me over the last year or so. I use it with a serial console (no monitor/keyboard/mouse) and have not installed X or any window managers.
These days there are so many linux distros, it can be overwhelming trying to pick one. If you don't want to see three pages of output when running 'ps -ef', Arch might be for you. There are many other distros that will probably fit your bill as well.
