Ubuntu should be easy and fine, I run Squeezecenter on Debian Etch, and
it can even play Apple files and BBC Radio (altough with some tweaking
and plugins) on a old Pentium III 1Ghz PC with 384 MB of RAM.

I myself run it headless (without the GUI), but with the GUI in Ubuntu
should be easier to set everything up, and many people use Ubuntu so
you can get help very easily if you run into problems.
