IMO, this is just a fact of life with packages such as RPM and deb. 
Files will be installed with ownerships and permissions based on the
user it is expected to be run as.  It should be fairly straight forward
to run as any user if you install from the tarball, but note that bug
5035 suggests that the --user and --group options to slimserver.pl are
broken.  As discussed in that bug, it should be easy enough to run as
any user with "start-stop-daemon" (in Debian) or "daemon" (in
RH/Fedora).
