Your problem with the symlink might be because /var/lib/squeezecenter/cache/squeezecenter-mysql.sock is created when SC starts, and deleted when SC stops. Since you don't want to disable apparmor and you don't want to edit the apparmor config because it's too "hacky" (?) you haven't left yourself many options. I've done the config file edit, which seemed like an easy enough solution -- it's not a hack, it's a "customization" ;o)
