with all the space on modern discs and the price of memory I cannot think why you wouldn't put kubuntu on your machine. A gui can really help...
the larger distros also fit in firefox and other useful stuff. If you look at the Kubuntu site there \may well be an easy way to move from the server to desktop edition.
