I think it's possible to run multiple instances of squeezecenter on the
same box.  As I recall, it is not easy and is a kludge.  There is a
library management plug-in (check out the 3rd party plugin info on the
website and forums) that will allow you to separate libraries.  This
isn't super-easy to set up or manage either.

You don't have to worry about having multiple copies of your music to
address the remote streaming bandwidth issue.  SC will transcode your
files to mp3 and you can choose the bit rate to match whatever
bandwidth constraints you have.  For this to work, you have to have
LAME installed.  SC will let you know if it is installed or not.
