I can't comment on the amount of disc space required for a headless
Ubuntu install.  The Ubuntu forums might be more helpful regarding that
question (maybe even their FAQ).

You can specify the default OS to boot and the timeout when no keyboard
input is made.  These can be specified in the file menu.lst.  This file
lives in the Linux file system (/boot/grub/menu.lst).
