Running a live OS from USB is quite a common thing to do these days and the Fedora version is pretty mature as they go.
The only other thing to bear in mind is the overall response time you get from SC. Assuming your thin client is beefy enough and you've got a USB 2.0 stick it should be OK. My box is a 500Mhz processor with 512MB RAM which runs SC absolutely fine. Before that I tried running it on a Linksys NSLU2 (aka SLUG) which has a 200Mhz processor and a piddly 32MB RAM. Amazingly I got SC 7.0.1 working on that but it was dog slow!
