IMHO, you may want to consider debian directly. Ubuntu is based upon,
built on, derrived from Debian. So if you are used to Ubuntu commands,
they are nearly the same as Debian.

Debian changes more slowly than Ubuntu. I like that for servers, as I
also belong to the "if it aint broke don't fix it" religion. Ubuntu does
releases every six months, Debian is more like every couple of years.

I believe life is easier with a GUI, there are many GUIs (specifically
windows managers) for Debian that are a ton easier on hardware than
Gnome or KDE. But I don't keep up, I just run a  low end VGA level GUI
on all of my servers.
