Or if the repository contents change.

When 7.3.3 becomes stable:
apt-get update   will find 7.3.3
apt-get upgrade (or apt-get install squeezecenter) will install it.

All without changing sources.list.

The repository contents will change when 7.3.3 is official (though
sometimes it can take a day or two before someone kicks the build script
to move files to the new locations).

(This is how updates to things like security.debian.org as well as the
testing/unstable branches work.. and even stable for the main debian or
ubuntu archives when the 'stable' changes versions... though that often
takes a dist-upgrade to iron out things, but the debian/ubuntu repo's
are much more complex than Slim's.)
