Yes, mhddfs was just my last application of the principle. It is a bit
scary, but harmless in read-only mode (anyway in write mode it fills
drives first to last, that's not always adequate.)

Anyway, what I'd do personally in this case is have a script check the
presence of the UUID, and then do the mount. Kind of what your script
does already. The system would not hang. 
In addition, if the /etc/init.d script to start/stop SBS was a symlink
to a script on the drive (on a know mountpoint), then SBS would not be
started when the device is missing, as it would be a  dangling link.
(or you can raise some flag when the mount was done.)

Maybe there is another way, using udev and/or autofs to really
"automount" the drive, and leave fstab alone ? (I have used both, and
posted about it in the forums some time ago.)
