I'm running Ubuntu Server LTS 10.04 headless. Similar sounding spec to yours, but OS and data all on one traditional HDD. Like the last poster I'm relatively inexperienced with Linux, so haven't tweaked at all, but it was easy to set up and it's made a perfectly stable, reliable, performant system. Almost a year since I set it up and I've never lost the use of my squeezeboxes or been dissatisfied with the way they run. (Sometimes I feel like the only happy customer here....)
