For server applications Ubuntu may be a little too active in trying to keep up with the "latest and greatest", whereas debian is stable but not bleeding edge. And despite Ubuntu's relative hyperactivity, after several upgrades over two years it still wants to load the wrong drivers for my server's network card.
Ubuntu is great for those new to Linux, and excellent as a desktop environment.
