I've managed to get mediatomb (another DLNA server and an alternative to
XBMC) installed on my headless, non-gui SBS box which is running Ubuntu
10.04lts.  It's working quite well and the installation couldn't have
been more straight forward:

#sudo apt-get install mediatomb-common mediatomb-daemon

Then, if you're running a firewall, open up port 1900 udp and port
49152 tcp.  After that, you can configure meditomb via the web
interface (http://your_server_ip:49152/

That easily-installed version of mediatomb lacks some features (e.g. no
support for custom javascript import scripts) that you could include if
you built from the source, but it's suiting my purposes very well,
which is to serve up .m4v videos.

SBS and mediatomb seem to coexist on the server very amicably.
