I did not feel the need for downgrading from 7.6, and never used 7.5
(jumped from 7.4 to 7.6).
But I did downgrade a few times in the past without much issue.
What I do:
- backup the SBS files (stuff in /var/lib/squeezeboxserver, search for
posts on what to backup here or on the wiki pages)
- apt-get remove, auto-remove (for orphaned libs), and then dpkg
install

(I think 7.5 used mysql when 7.6 uses sqllite. You might need to pull a
mysql 5 installation with apt, providing the environment fit to dpkg
install 7.5)
