2 options: 1) Leave HD attached to touch. Download squeezeplay for linux. Search threads. Use it to control the Touch. (Probably most android iphone apps will also work). They need to be connected to the same router via wifi or ethernet. 2) Connect HD to laptop and install LMS server on it. Touch will find LMS and let it play music. To control Touch you can use apps on phones, web interface, squeezeplay or any other web enabled device.
Under 2 it is usually better to connect the laptop via ethernet cable to the router but is not required. Depends on the what you listen to (filetypes and quality) as well as the quality of wifi connections.
