I was comparing it to Lubuntu, which I liked the look and feel of
instantly (maybe as it's quite similar to what I'm used to).

Anyway, I've now got vortexbox up and running and it's fantastic! Don't
know why I didn't just go for it in the first place - it's the proper
solution for what I was after. I've even done a little bit of fiddling
in the terminal to set bits up (mostly to attach a USB drive). Once the
.iso had downloaded it was installed and running in under an hour.
