I've been thinking about that too, I have the iphone but not the car :) I've found 'this thread' (http://forums.slimdevices.com/showthread.php?107995-picoreplayer-without-network/page4) about ad-hoc mode which is not too old and might be useful.
Other than that, I haven't found a true AP recipe. I think I'll boot a pCP 3.20.2 and see how it rolls. I understand your use-case is the same as the linked thread, the Pi as an island, i.e. no network access at all. Of course to set it up etc network is needed so that will be something of a routed setup. A bridge would be neater though.
