I have 2x128MB (OWC) and 1x64MB (Kingston). No problems here.

I had this trouble with the 10.1 Server installer. I chased my tail for 
weeks trying to work out what was wrong. I have had everything from 
Kernel Panics to perfectly viable install volumes just brain-farting 
when I tried to install.

You need to make sure that the only drive with termination enabled is 
physically at the outer (i.e. furthest from the logic board) end of the 
cable. Furthermore if you have a later model 50-pin drive you need to 
make sure that it know where to draw terminating power. Also try 
attaching the CD-ROM drive to the other SCSI bus (this involves routing 
another SCSI cable up and around the PSU box but it solved a lot of 
problems for me), which should be on a 50-pin male header next to the 
one you are using for the hard disks/CD at the moment.
