While I personally think trying to run OSX on a nubus mac is a total waste of time. The only possible reason I can think of is being able to say I did it!
Having said that lets be careful with the facts ;-) Nubus G3's upgrade cards are made by Sonnet and should be available all over the place. Here is OWC's current offering:
