No, that is not true. OS X is perfectly capable of communicating with a printer via the serial cable. My Apple Stylewriter II is printing fine in Jaguar on a Umax c600/Apus 3000. You have to make some modifications, though.
We have a LR 16/600 PS hooked up to our Asante Router's parallel port (most, if not all, of the LR printers have a parallel port) and it works great with our various machines running OS 9.1, 9.2 and OSX. It even works wirelessly with a notebook.
The parallel to USB cables are another option.
I did have to configure it initially using a serial cable and OS 9.1. Setting it up with OSX was easy after that, as all the drivers for the Apple LR printers are already there.
