As others have said, you can turn the old 7100 into a useful print-server, so that your OS X machines can print directly to your PLW. You might also be able to turn it into a crack-proof firewall plus DHCP server (needs IPNetRouter), an lpr spooler (needs Print66), a local DNS server (needs MacDNS - though that can be a temperamental program), a local mail server (needs EIMS or better still SIMS),a local listserver (needs Macjordomo) and so on.
But bear in mind that running these kinds of server applications together may take a certain amount of alchemy, and YMMV.

No.
OS X requires at least a PCI bus, even with XPostFacto. It also needs a 604e
(10.1) or G3 (10.2 or later) to boot from, so the Sonnet Crescendo 7200 which
boots on the 7200's 601 and uses it as a kind of I/O processor won't work.
