Anyone know of a hack that will make iTunes 4.0 or later run on Mac OS Classic?

No, and I can't imagine that it's possible. The differences between Mac OS classic and real multitasking operating systems like Windows 9x and later or OS X are deep and profound.

From what I could gather at VersionTracker <http://www.versiontracker.com/dyn/moreinfo/macosx/ 10227&vid=180693&mode=info> iTunes was compatible with OSX 10.1.5 right up to iTunes version 4.7.1. It was only with the latest iTunes 4.8 that OSX 10.2.8 became a requirement.

I have used OS X 10.1.5 through 10.2.3, and I would not recommend any version before 10.2.6 for anything other than historical interest. Not for reasons of compatibility, but rather reasons of reliability.

The "Sound Bridge Wired Setup" dia gram at <http://www.rokulabs.com/products/soundbridge/faq.php#slim> states that one needs a DHCP router in one's setup. I do not understand this, not really knowing what a DHCP router is and have emailed Roku's support about it.

You would only need a DHCP server to provide an IP address for the Soundbridge. Many home networks include a firewall router that includes a DHCP server, and that's probably what they mean by a DHCP router. Mac OS X includes a DHCP server (bootpd)...

http://developer.apple.com/documentation/Darwin/Reference/ManPages/ man8/bootpd.8.html

It's not clear to me why you would need a DHCP-enabled router if a crossover cable will work, and it should be possible to configure an IP address manually, however the user's guide doesn't seem to provide a mechanism to do that. It also claims to support Rendezvous, and in that case it should be able to use that rather than a DHCP server... but again there's no mention of how to configure that.

Configuring bootpd doesn't seem terribly obvious, alas, even by UNIX standards... it's one of the NeXT-oid apps that's neither fish nor fowl. I've been looking for a good document on it to no avail.
