As per the webpage, I repartitioned and created a 2xRAM (1.5GB in my
case) dedicated swap partition in unjournalled HFS+ format, ensuring
that it had no spaces in the volume name. Like the example given, mine
is called "Swap" and so mounts as /Volumes/Swap.

I recommend that you ignore any instructions about "2 x RAM" or "3 x RAM", and size the swap partition based on the largest anticipated virtual memory use, plus a safety factor. That may be the same as RAM, or it may be 10xRAM. I typically size it based on disk space.. 1GB for any UNIX system with at least 6GB of disk, or 5GB for any system with at least 40GB. On big servers that may have up to 30GB of RAM I allocate a whole disk (or at least half a disk) just to swap...

I found that it was necessary to explicitly state the format of the
disk with the -t switch; OS X mount does not, it seems, auto-detect
the disk format and I presume that it is defaulting to its native UFS
format.

You may well benefit from formatting swap UFS. You will certainly have no need for journalling and UFS is less likely to do something horrible when it fills up.

However, with 768M RAM, it's not actually *using* any swap, so the
drive still keeps going to sleep...

Hence my comment about how much space you should allocate to swap. :)
