The Debian people I know prefer to stick with Debian(my self included).
When we tried using Ubuntu at work a user told me that he had more
trouble with included programs on Ubuntu than on Fedora(personally I
loathe Fedora), so I think sometimes with Ubuntu they rush the newest
stuff in sometimes before it's as tested as it is in other distributions.
As for security I know older version of Ubuntu don't need a firewalls
because they have all services either turned off or set to listen
locally only. I don't know why other oses are still not doing that.
That said Ubuntu has for the most part the same security as other
distros with the exception that fedora ships with selinux turned on, but
as has already been mentioned that can easily be added to Ubuntu.
As for extensibility Ubuntu includes over 23,000 packages. In what ways
do you plan to extend beyond what's already included? If you are
looking to use proprietary packages with it you may have a harder time.
As most vendors favor fedora/redhat.
The community behind Ubuntu seems to be one of the best to me. You can
also get support from many of the Debian community members(if they don't
rtfm you).
