You could try downloading IOUSBFamily from opensource.apple.com. It might have 
the USB Prober source code. It does for the version of Mac OS X I'm using. 

It looks like nobody thought to implement any USB packet sniffer on Mac OS X. 
Hopefully someone will do this in the future.
