The exchange files should be left there only if you have debugging enabled for activation. Check your log configuration and switch off debugging for i.m.m.exchangesimple and i.m.m.exchangetransactional so there are no new files left there. You can safely delete all exchange* files at runtime, as long as there is no activation running (which might not be so easy to ensure in your case) ... if nothing else you can definitively remove all exchange* files older then today.
