Can't you just add your custom paragraph renderer classes to
config:/modules/standard-templating-kit/paragraph-renderers/stk/classesToInclude?
There is also
config:/modules/standard-templating-kit/template-renderers/stk/classesToInclude
for extra custom template renderer classes.
