Unfortunately I am not using the STK, otherwise I would try your solution. Very 
clever, by the way, I'll keep it in mind for later projects; it seems that if 
the client is happy with Magnolia they are going to want to do more projects, 
the next time hopefully with STK to make my life easier!

I wound up doing it just as I said in my first mail, in one place with the 
cms.includeTemplate tag, and in other using freemarker code. The only drawback, 
it seems, is that where you use straight freemarker code you can't use the 
cms.newBar or cms.editBar.

As for the other question, I found the answer. You can just use ${content.@uuid}
