Hello, I am not aware about any official documentation to the downgrade, but we did the downgrade from EE to CE at www.jboss.org last September, so I can shre our experience.
First of all, you have to check if you use any paragraphs from the EE, and remove them (or replace them with some paragraph from CE). Then you have to remove EE modules: JAR files from the WEB-INF/lib directory, and configurations from /config/modules. And you must check the configuration (both /config/modules and /config/server) for dependencies to EE modules - especially check /config/modules/adminInterface, /config/modules/cache, and /config/server/filters. I had a complete list of dependencies I was removing - but I am unable to find it right now. I will post it if I find it later. And of course don't forget to remove the EE content in docroot and templates.
