Hi Jan-Hendrik! Personally, I would start with a clean CE install, and use XML-Export-Import to transfer the content of the website, dms, data, templates and resources workspaces. For the config workspace, you will need to transfer the template, paragraph and dialog definitions.
After that, it's a matter of cleaning up the templates, making sure your content does not use any EE-specific templates. If you were using the imaging module, then I imagine the transition will be more painful, as there is no CE equivalent for the EE imaging variations.
