Hi Tullio, I'm surprised to hear google analytics isn't enough for you. In my experience you can't really beat google-analytics for web statistics.
Check out PIWIK, which is a solution similar to google-analytics you can run yourself. For access logging, see the tomcat documentation. Basically, there is a "AccessLogValve" (normally already present in the tomcat server.xml file, you just need to switch it on by removing the comments).
