Thank you so much, the form processors for the shop form were not active. If somebody else faces the same problem, unfold in the admin: Configuration -> modules -> shop -> templates -> components -> features -> shopForm -> fromProcessors
sendContactEMail and sendConfirmationEMail are deactivated by default, just set enabled to true and activate changes to the public instance.
