I would second Sean on this. We actually switched to RC3 to fix a bug that was preventing us from using RC2 (the fck editor was replacing all URLs). Unfortunately it seems RC3 still has a few problems. We're unable to activate content from an author instance to a public instance on the same machine, and the defaultURI behavior has changed to be a 302 redirect instead of a server side redirect. Also, the versions menu item feature does not work (goes to URL http://..magnolia/)

If you have the ability, I would definitely wait until the next milestone release before going with 3.0.
