When we created our site we later changed the name of the templates and we desperately needed this ability. We tried exporting our entire site to xml files and change them, but we couldn't re-import the files because of binary stuff not working right. So we had to write a utility template that would do it for us.

When a page is created using one template - it's trivial to switch it's template from the administrator panel. For paragraphs, however, this doesn't
seem to be the case.

One easy way to do this would be to make the dialog for the paragraph have a popup menu setting a property, and then having enclosing page template would read the value of that to determine which template to load to render the paragraph with.... But that seems like a rather roundabout way to fix a simple problem that should be handled in some kind of admin bar control.

We have rarely encountered the need to switch paragraph-templates in the last three years. If you think it should be possible, add a jira issue (new feature) and lets see if anyone votes on it ;-)

Alternative: patch the sources.

Also - why can't you drag a paragraph from one collection to another? (i.e. From the main content to the sidebar) You can do it by moving the node in
the JCR, so why does the editor interface not allow this?

Good question. I'd love to see a patch for that as well, as you can see here:
