I just could tell you about our setup to estimate yours.

We use a dual core machine (2.6 GHz) and 6GB RAM for up to 60 user simultaneously. During those sessions CPU load up to 60%, memory ~4.5 Gb free, no swap used.

Recording takes a lot of CPU an RAM, Interviewrecording will be processed completely on the server. But the main part of it normally takes place after the session... If you use one room at a time then it just takes a bit till the recording is converted.

I'm use iptraf for unubtu. I think the load is a little less than the calculator.
calculator see: One channel video 120x90 for 500 clients ~ 95,7Mb/s
It is Good, and hoster allows Upto 1Gbit/s Ethernet-channel on need timehour*$ :)

What about hardware configuration?
On the test machine, with 20 clients,I see the memory usage up to ~2.5Gb (1,5Gb free and swap don't used)
When to measure the load on the CPU? I'm used "top" see 10-30%

The situation drastically changed when recording.
And becomes critical after recording, when you start the conversion.
