The problem starts when i create a connector. There are no bundles present
in the choices. I checked bundles folder under /var/tmp/syncope/bundles all
bundles are there. Also there is no Extensions section as seen in
2.0.7-SNAPSHOT. Please see provided screenshots.

Screenshots are pretty much explicative, but the questions are:

1. did you select /var/tmp/syncope/bundles in the GUI installer?
2. have you checked the installation logs? did everything go fine there?
3. have you checked that such directory is populated with the ConnId bundles? was such directory empty or non-existing before? 4. have you looked at the Syncope and Tomcat log files during Tomcat startup? the reason why no bundles are displayed is there.

FYI, the GUI installer does not allow to pick any Admin extension (only Swagger and the Activiti workflow adapter), so it is normal that there is no such menu entry in the Admin Console.

Is Apache Syncope 2.0.7 fully released or Is there something I should do to
display these bundles?

There is no concept like as "half release" here, don't understand what you mean.
