Heck I tried hacking the DataAccess.xcu file in every place I could find it but it didn't work.

I hav also un-installed OOo ( Fedora Core 4 ) and removed any system reference to OOo, re-installed OOo, and then added the driver back in. I ran into the same issue with the SQLite driver a few months ago so I'm wonder how I borked OOo so completely.

Did you try installing it via the menu "Tools - Package Manager" ? Or perhaps upgrade OOo to 2.0.3? I can't recall if I had it working with 2.0.1 (I may have been using the JDBC driver at that time), but I'm running the SDBC driver now with 2.0.3 on FC3 and Windows.

One more thing, the Redhat FC version of OOo, if you had it installed at any time, uses ~/openoffice2.org or similar for user files, whereas the standard version of OOo, if you've upgraded to it, uses ~/.openoffice2.org (i.e. a hidden directory). Make sure that this isn't leading you in the wrong direction.
