I have OpenOffice.org X11 for the Mac. When you click on the
OpenOffice.org icon to launch the application, it effectively only opens
up a Writer document to start with. However, as Frank has mentioned, you
can create a new database by going through  the menu structure File >
New > Database. There have been several personal attempts  to enable
icons for each of the different modules of the suite, however, this
turned out to be rather complicated to achieve on the Mac, in view of
the way the system identifies any given process. I believe it is still
possible to do so, but it involves writing a specific script to launch
each module and then associating an icon for each.
