OOo installations on other platforms come with specific executables for all applications (swriter, scalc, and so on), which a small wrappers around the soffice executable, basically adding a "-swriter" / "-scalc" / ... command line argument to it. Couldn't the same be done for the Mac? The infrastructure for this should be in place already - IIRC, the wrappers are (platform-independently) built in module "desktop".
