I think the basics of what you're doing is correct, it should work.
Opening a new Calc file (using LO Community 7.5.8.2 on Debian):
1. Entered some text in Sheet1.A4, and named that cell via Name Box
2. Added Sheet2, and created a Hyperlink using Ctrl+K
1. Select Document from link options
2. Click the button besides Target field and select the desired
target from Range Names in dialog.
3. Set Frame to _self (don't know is this necessary or not)
4. Set some text (what appears as the link) in Text field
This created a valid hyperlink.
The references change properly when rows are inserted or deleted, it
still goes to the correct (named) cell.
I checked what happens if cell Auto Calculate is off, but it still
updates the references.
In Tools > Options > LibreOffice Calc > General there are some settings
for Expand and Update References, but they are un-checked on my instance.
Could it be that you have too much data, it can't process everything
properly?
Did you save, close and re-open the file to make sure the references
aren't updated then?
